Pasta, Pancakes, Cupcakes. Yes. 

Dug into my frozen meals this week. Pierogies with sweet onions. Really tasty. Reminded me of my trip to The Polish Place on Staten Island this summer, where I had the real deal. 

More buttermilk to use up! The time I froze it for a while... experimenting and such. It worked!
Tried a new recipe of oatmeal buttermilk pancakes from this lovely website. Serious Eats. 
Nothing beats Dad's. But my friends loved them!

Yes, I've been eating my fruits and veggies. Proof: 

Also, hot apple sauce has stolen my heart. 



And of course I made cupcakes! Lemon with Fresh Lemon Frosting.

Not really a week full of culinary genius. A few things worth mentioning:

A) Did you know that you can cook scrambled eggs in the microwave? Well I didn't. Until this week. And I think it's incredibly convenient if you don't have a stove but want scrambled eggs.

Scramble first. Add milk. 30 second intervals on HIGH until cooked. Add cheese and spices.

B) I made Chicken noodle soup! Yum! And it made enough for 5 bowls, yay!

B) I drink A LOT of smoothies. 




And I had two cupcake orders (and made about 50 for the game!)

Let's be honest. Flapjack is so much more fun to say than pancake.

Use up time! This week I made Red Velvet Cupcakes with Buttercream Frosting for my customers. :) 

I sold my 50th Cupcake this Friday! 

















The cupcakes took buttermilk, and instead of letting it go to waste I figured I should use it up. Buttermilk = Pancakes. I found a new recipe for Chocolate Pancakes I had cut out, and basically cut it in thirds and switched some things around.


Chocolate-Chip Chocolate Flapjacks
yes I ate these for dinner. yes it made five. and yes ate them all. 




















(sidenote: I didn't really measure anything so here's some guesses?) 

a little more than 1/2 cup of flour
a little more than 5 tsp cocoa powder 
about 6 tsp sugar
1/3 tsp baking soda
pinch salt
3/4 cup buttermilk
1/3 egg .... yeah I know. I plan on scrambling the other 2/3 when I'm not so extremely stuffed. 
1 Tbs. oil 

Chocolate Chips (optional)


I thought this might be a good time to introduce my roomate, Betty. This is her chillaxin on my couch. :)

College: Week 2.

Blessed is the person who is too busy to worry in the daytime and too sleepy to worry at night.

Well. Life is back to being hectic. But hectic in the good sense. Hectic in the see my friends, like my classes, get my work done and still have time to bake/cook up a storm kind of way. Oh yeah... and read numerous cooking blogs... and watch my new favorite show: MasterChef.  Click the link and you'll get addicted too.

On my Use-Up List this week. Veggies, Veggies, Veggies. (Yellow Squash, tomatoes, spinach, sweet onions)
And Swirl Bread. And garlic.

Yummy-in-my-tummy Chicken Chili. Thank you McCormick 
I followed the instructions and added fresh garlic, a can of corn, and spinach. 
Lasted me 4 meals and I froze some. 
This is: "Stick everything you need to use up in a pan and eat it"
A lot yummier than it sounds. Sautéed veggies with butter and seasoning.
And my first attempt at a Sunny-side-up egg. => accomplishment.  

And, of course. cupcakes.
