Black Bean Soup

Black Bean Soup
adapted from Serious Eats 


This was really delish and healthy. Definitely a make-again. 




Ingredients: 
1 Tcanola oil 
1 medium onion, finely chopped 
3 tsp. minced garlic
1 T chili powder
15 ounces chicken broth 
1 (15 ounce) cans of black beans
3/4 cup pink beans, rinsed and drained 
3 Tbs. Lime Juice 
salt and pepper to taste 
preferred garnish 


1. In medium saucepan, heat oil over medium heat. Add onion and saute until soft. Add garlic and chili powder and stir to combine. Add beans and broth. Bring to a boil. Reduce heat and simmer for 25 minutes. 


2. In a blender, puree half of soup until smooth and return to pot. Stir together and add lime juice. Season. Eat, yum!


**1/18/11** I had frozen some of this in individual containers. I put one in the fridge last night and it was perfectly thawed to be heated for dinner tonight. After a quick zap in the microwave, it's as good as new. I would have never guessed it was ever frozen!
