Easy-Peasy Pasta with Beans and Crushed Tomatoes
Adapted from Family Circle Magazine, 2008
1/2 T Olive oil
1/2 onion, choppped
1 tsp minced garlic
(14) ounce can of basil flavored crushed tomatoes
desired seasoning (I used rosemary and pepper)
1 (15 ounce) can drained white beans
Cooked whole-wheat pasta.
Heat oil in large pot. Add onion, and cook for approximately five minutes. Add garlic and cook for one more minute. Add tomatoes, rosemary, and can of beans. Simmer, covered, at least 15 minutes. Meanwhile, cook pasta. Serve!
This is so easy, and the only 'fresh' thing it takes is an onion, which is helpful when you don't know when you'll be able to make it to the store. The original recipe called for 2 T oil, 1 onion, 1 clove garlic, 28 ounce can of crushed tomatoes, two cans of white beans, and 1 pound pasta. They say that should feed 4-6 people. More like 9-10, that's why I halved it.
I made my version for approximately 4 servings and it came out to be ~300 calories per servings.
