4 ingredient Stone Soup
Start by sauteing several garlic cloves in olive oil until golden. Then, for each person, add to the pot a small potato, peeled and cut into chunks, along with 1 cup water (or half chicken broth, half water) per person, plus and extra cup for the pot. Cover the pot, cooking over high heat until the potatoes are tender. Then, stir in cleaned baby spinach (~10 ounce bag for 4 people) and cook until stems are tender. Add in desired spices and grate parmesan or parmiagiano over before eating. Feel free to substitute drained beans for the potatoes.
