Ginger & Honey Glazed Carrots

These carrots were delicious! 

2 Servings | 10 minutes 
3 large carrots, cut into coins
1 Tbsp. butter
1 Tbsp. honey
1 pinch ground ginger
Cover carrots with water and bring to a boil. Cook until they are tender, but still have a little crunch. When done, drain. 
Melt honey and butter in large saucepan. Add ginger and then add carrots.  Stir in carrots and simmer until heated through.
